Dawet Ayu is a traditional drink made from rice flour, coconut milk, and brown sugar. Natural colors derived suji plants are often used. We can make ayu into functional with anthocyanin content using natural such as sappan wood beetroot. use the benefit of this research reference that beetroot contain which acts an antioxidant beneficial for health. conducted study to analyze characteristics, acceptability, levels dawet addition The design used was descriptive, experimental compared three groups (50 g, 100 150 g). randomized block design. results statistical tests Friedman test showed there were significant differences in indicators color, aroma, texture, taste. hedonic obtained highest public acceptance sample P1 grams beetroot) taste score 3.30 (like very much), color 3.77 aroma 3.58 texture 3.48 (really like it), P3 (150 gr 23.14 mg/100g content. Caesalpinia span heartwood is used in folklore in India. The present work attempts to summarize the pharmacognostical characters of the heartwood of this plant. Two new phenolic compounds, epicaesalpin J and 7,10,11-trihydroxydracaenone, were isolated from the heartwood of Caesalpinia sappan L. Their structures were identified by spectroscopic analysis methods, such as 1D and 2D NMR, along with the high resolution mass spectral data.
